One of the hottest trends in cookware these days is silicone. Flexible, durable and easy to store —not to mention available in an endless array of colors and styles — silicone offers a number of advantages over traditional metal, glass or stone baking pans.
Yet some cooks have tried silicone bakeware and only been frustrated or disappointed with the results. Admittedly, at first glance it might seem impossible that a flexible cake pan could successfully produce a cake,but silicone is actually a very effective material for bakeware — if you use it properly.
A Sticky Situation
One common mistake that bakers make when trying silicone for the first time is assuming that the material is non-stick. It is easier to create clean shapes and avoid breakage with silicone than with metal cookware because you peel the pan off of the cooked item instead of removing the cake from the pan, but sometimes you still must create a nonstick surface. Therefore, thoroughly grease your silicone bakeware before use to ensure everything comes out in one piece. In general, cooking spray works best.
The only exception would be when you’re using a silicone baking mat for cookies. The mats work similarly to parchment paper and usually don’t have to be greased.
Filling and Baking
Fill your silicone bakeware as you would any other pan, being careful not to overfill. Some types of pans may need to be placed on a cookie sheet for support; in particular, if you are using smaller pans or individual cupcake cups, the extra support is necessary.
Using silicone bakeware doesn’t require that you make any adjustments to your recipes, but you might need to adjust the oven temperature. Carefully follow the manufacturer’s instructions for setting the oven temperature and watch your food’s baking progress to avoid burning or undercooking your treats. You might smell a slight rubbery smell the first few times you use your silicone bakeware, but that’s normal and will go away in time.
One of the major advantages of silicone bakeware is its ability to cool quickly. The pans will be hot in the oven, but will be cool to the touch in less time than metal or glass pans. Allow your baked goods to completely cool before attempting to remove them, and never use metal or sharp utensils to remove items. Silicone is durable, but a knife or metal spatula could nick or puncture the pan.
Another place where silicone bakeware earns points over other types is during clean up. Unlike many metal baking pans, silicone can be washed in the dishwasher, letting you do other things instead of tackling a sink full of dirty dishes. When it’s time to put it away, there is no need to install a whole new set of cabinets: silicone’s flexibility means you can place it wherever you have room. Even if it’s bent or squashed, it will return to its original shape when you use it next.
Silicone bakeware has many benefits, and even if you’re loyal to your favorite metal pans, you might want to give this new material a try. You could just find a new go-to pan!
