One of the easiest and most satisfying recipes in French Cuisine is for the crepe.  You can make sweet crepes for dessert, or savory crepes for an appetizer or snack.  One of the most traditional desserts with crepes is a strawberry crepe with a creamy, cheese filling.

Traditional French Crepes

The recipe makes approximately 8 crepes.

Crepe batter:

  • 1 cup flour
  • 2 eggs
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt

Filling:

  • 1 cup mascarpone cheese
  • 1 cup plain greek yogurt
  • 1/4 cup powdered sugar
  • 1/4 teaspoon orange zest

Topping:

  • 2 cups sliced strawberries
  • 1 tablespoon of lemon juice
  • 1/8 cup of powdered sugar

Directions:

  1. To make the crepes, put the flour in a large bowl, and make a well in the middle.  Crack the eggs into the well, and whisk in the eggs. Slowly add in milk, continuing to whisk until you have a smooth batter.  Whisk in the butter and salt.
  2. In an oiled pan over medium heat, pour in approximately 1/8 of the batter, spreading evenly.

  3. Cook for approximately 2 minutes and then flip.
  4. Combine the ingredients for your topping in a separate bowl, and toss to coat.  Let sit.
  5. In a mixing bowl, place your mascarpone cheese and geek yogurt, and mix until combined. If you have a stand or hand mixer, that works best.
  6. Once they are combined, add in your powdered sugar and orange zest, and allow to become well incorporated.
  7. Fill each crepe with approximately 1/8 cup of the filling, and top with the strawberries.
