Guacamole makes is the perfect accompaniment to a huge variety of dishes. Because it has some substance, it's great for dipping vegetables, adding to wraps, and serving as a side, and it requires minimal kitchen time. Plus it's absolutely delicious.
As summer heats up, if you're like most, you tend to move as much cooking outside as possible. The grill is, quite frankly, one of the best friends you can have. (A slow cooker is the other.) The mere idea alone of turning on the oven or stovetop for any reason during hot summer weather is enough to make one break into a sweat. So, we turn our focus to anything we can cook outdoors, which often means tacos, sandwiches, or any other way you can dream up to make meat a finger food.
Guacamole makes the ideal accompaniment for just about any of these meals - it works as a sandwich spread, adds additional flavor to burgers, makes for a tasty veggie or chip dip, and is, of course, perfect on any Tex-Mex or Mexican fusion dishes. Shrimp, chicken, beef, pork, and fish tacos all go very well with the creamy -- or chunky -- avocado goodness. In fact, it's also fantastic as a salad dressing, or should you be looking for a great addition scrambled or fried eggs, it's great on them too.
You may already know all this and just be excited for an amazing guacamole recipe. So without further, we bring you the only guacamole recipe you'll ever need. Why won't you need another recipe? Because you can modify the ingredients any way you choose to consistently make the guacamole your family loves.

The Only Guacamole Recipe You'll Ever Need
(recipe modified from SalmonAtSeven)
1 Roma tomato, diced
1 green onion, sliced
3-4 stems cilantro, diced
1/2 jalapeno, seeded and diced
1-2 cloves garlic, diced
1 tbsp lime juice (or lemon juice)
Salt & pepper to taste
Halve the avocados, and discard the pits. Scoop out the avocado, using whatever technique you prefer, and place in a bowl. If you need a great avocado slicer, check out the options in the CilantroCooks store.
The key with all of the remaining ingredients is to get as fine a dice as possible. This will allow you to create whatever texture you want -- chunky or creamy. Next, add all other ingredients except for the citrus juice and salt & pepper, and mash together to create your wonderful guacamole.
Taste and add salt and pepper if needed. Once your guacamole has reached the perfect consistency, add the citrus juice to prevent it from browning, and serve. If not serving immediately, cover with plastic wrap and refrigerate.
Tortilla chips are the most well-known way to eat guacamole, but it truly makes the perfect condiment for so many foods - from veggies to sandwiches and everything in between.
Notes: If you're missing any one of these ingredients, you can easily omit and still have wonderful guacamole, except of course for the avocados. Those are necessary. If you're missing a whole slew of ingredients, but happen to have some great salsa on hand, start adding some salsa ¼-½ cup at a time to the guacamole. It won't be quite the same, but it will still serve the same delicious function and be a great addition to many of your outdoor -- and indoor -- meals.
